Small blue peas have a texture, colour and size that allows them to be canned as small processed peas.

These have replaced the American Alaska pea because of the price advantage and the convenience as regards delivery.

Very few varieties are suitable because of soaking and cooking problems and because of low yields they can be expensive to grow which in turn necessitates high priced contracts to growers to compete with other peas and crops.
